Black-Eyed Pea, Ham and Collard Greens Stew
Steamed Rice and Tomatoes
Ingredients
- ¾ cup chopped onion
- 2 cloves garlic, minced
- ½ (8-oz) pkg cubed ham
- ½ Tbsp olive oil
- ½ (16-oz) pkg chopped collard greens
- 1 (32-oz) carton low-sodium chicken broth
- ½ cup water
- 1 (16-oz) can black-eyed peas, drained and rinsed
- ½ Tbsp apple cider vinegar
Instructions
- Sauté onion, garlic and ham in hot oil in a Dutch oven over medium-high heat 6 minutes or until onion is tender and ham is browned.
- Stir in remaining ingredients.
- Bring to a boil; cover, reduce heat, and simmer 15 minutes or until collards are tender.
- Serve over rice, if desired.
Side Dish Ingredients
- ½ cup instant brown or white rice
- 2 Roma tomatoes, sliced
Side Dish Instructions
- Cook rice according to package directions.
- Serve tomatoes with rice.
