Smothered Chicken Breasts

Ingredients

  • 2 slices center-cut bacon
  • 2 (6-oz) boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • ¼ cup barbecue sauce
  • 2 (0.7-oz) slices sharp Cheddar cheese
  • 1 green onion, sliced

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp; drain on paper towels, reserving drippings in skillet. Crumble bacon.
  2. Sprinkle chicken with salt and pepper.
  3. Add oil to drippings in skillet. Cook chicken in skillet 4 to 5 minutes per side over medium-high heat until done.
  4. Spoon 2 Tbsp barbecue sauce onto each chicken breast. Top with cheese; cover and cook 1 minute or until cheese is melted.
  5. Sprinkle chicken with bacon and green onion.

  • 1 (12-oz) pkg frozen broccoli florets
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ lemon, cut into 2 wedges

Side Dish Instructions

  1. Cook broccoli according to package directions.
  2. Season with salt and pepper. Serve with lemon wedges.
