Smothered Chicken Breasts
Lemon Broccoli
Ingredients
- 2 slices center-cut bacon
- 2 (6-oz) boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- ¼ cup barbecue sauce
- 2 (0.7-oz) slices sharp Cheddar cheese
- 1 green onion, sliced
Instructions
- Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp; drain on paper towels, reserving drippings in skillet. Crumble bacon.
- Sprinkle chicken with salt and pepper.
- Add oil to drippings in skillet. Cook chicken in skillet 4 to 5 minutes per side over medium-high heat until done.
- Spoon 2 Tbsp barbecue sauce onto each chicken breast. Top with cheese; cover and cook 1 minute or until cheese is melted.
- Sprinkle chicken with bacon and green onion.

- 1 (12-oz) pkg frozen broccoli florets
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ lemon, cut into 2 wedges
Side Dish Instructions
- Cook broccoli according to package directions.
- Season with salt and pepper. Serve with lemon wedges.
