Ravioli with Spinach and Sundried Tomatoes
Caesar Salad and French Rolls
Ingredients
- 3 Tbsp olive oil
- 1 (8-oz) pkg sliced baby portobello mushrooms
- 1 cup finely chopped onion
- 1 Tbsp bottled minced garlic
- 1 (16-oz) pkg frozen chopped spinach, thawed and squeezed dry
- 2 cups water
- 1 (14.5-oz) can diced tomatoes with Italian seasonings
- 1 (8.1-oz) jar sun-dried tomato pesto
- 1 (25-oz) pkg frozen 5-cheese ravioli
Instructions
- Heat oil in a large skillet over medium-high heat; add mushrooms, onion, and garlic. Cook, stirring frequently, 8 minutes or until tender.
- Stir in spinach, water, tomatoes, and pesto; cook, stirring frequently, 5 minutes.
- Add ravioli; reduce heat to medium.
- Cover, and cook 8 minutes or until ravioli are tender.
- Season to taste with salt and pepper.
Side Dish Ingredients
- 1 (12-oz) pkg frozen French rolls
- 1 (22.5-oz) pkg Caesar salad kit
Side Dish Instructions
- Heat desired amount of rolls according to package directions.
- Prepare salad according to package directions.
