Ravioli with Spinach and Sundried Tomatoes

Ingredients

  • 3 Tbsp olive oil
  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • 1 cup finely chopped onion
  • 1 Tbsp bottled minced garlic
  • 1 (16-oz) pkg frozen chopped spinach, thawed and squeezed dry
  • 2 cups water
  • 1 (14.5-oz) can diced tomatoes with Italian seasonings
  • 1 (8.1-oz) jar sun-dried tomato pesto
  • 1 (25-oz) pkg frozen 5-cheese ravioli

Instructions

  1. Heat oil in a large skillet over medium-high heat; add mushrooms, onion, and garlic. Cook, stirring frequently, 8 minutes or until tender.
  2. Stir in spinach, water, tomatoes, and pesto; cook, stirring frequently, 5 minutes.
  3. Add ravioli; reduce heat to medium.
  4. Cover, and cook 8 minutes or until ravioli are tender.
  5. Season to taste with salt and pepper.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen French rolls
  • 1 (22.5-oz) pkg Caesar salad kit

Side Dish Instructions

  1. Heat desired amount of rolls according to package directions.
  2. Prepare salad according to package directions.
