Picadillo Bell Peppers
Oven-Roasted Green Beans
Ingredients
- 1 (12-oz) pkg cauliflower florets
- 1 lb lean ground turkey
- 1 cup finely chopped red onion
- 6 cloves garlic, minced
- 1 Tbsp chili powder
- ¾ tsp ground cumin
- ¾ cup raisins
- 24 small pimiento-stuffed olives, chopped
- ¼ cup all-purpose flour
- 1 (8-oz) can no-salt-added tomato sauce
- 6 large bell peppers (any color)
Instructions
- Preheat oven to 350°F. Pulse florets in a food processor until they resemble rice.
- Cook cauliflower, turkey, onion, garlic, chili powder and cumin in a large nonstick skillet over medium-high heat 5 minutes or until turkey is no longer pink, stirring to crumble.
- Transfer to a bowl; stir in raisins, olives, flour, and tomato sauce.
- Cut tops off bell peppers; discard seeds and membranes. Spoon cauliflower mixture into bell peppers. Place in a large baking dish.
- Bake 30 minutes or until peppers are tender.
Side Dish Ingredients
- 1½ lb green beans, trimmed
- 2 Tbsp olive oil
- 1½ tsp onion powder
- ½ tsp pepper
- ½ tsp salt
Side Dish Instructions
- Preheat oven to 350°F.
- Toss green beans with oil, onion powder and pepper; spread into a single layer on a baking sheet.
- Bake 15 minutes or until crisp-tender; sprinkle with salt.
