Picadillo Bell Peppers

Ingredients

  • 1 (12-oz) pkg cauliflower florets
  • 1 lb lean ground turkey
  • 1 cup finely chopped red onion
  • 6 cloves garlic, minced
  • 1 Tbsp chili powder
  • ¾ tsp ground cumin
  • ¾ cup raisins
  • 24 small pimiento-stuffed olives, chopped 
  • ¼ cup all-purpose flour
  • 1 (8-oz) can no-salt-added tomato sauce
  • 6 large bell peppers (any color)

Instructions

  1. Preheat oven to 350°F. Pulse florets in a food processor until they resemble rice.
  2. Cook cauliflower, turkey, onion, garlic, chili powder and cumin in a large nonstick skillet over medium-high heat 5 minutes or until turkey is no longer pink, stirring to crumble.
  3. Transfer to a bowl; stir in raisins, olives, flour, and tomato sauce.
  4. Cut tops off bell peppers; discard seeds and membranes. Spoon cauliflower mixture into bell peppers. Place in a large baking dish.
  5. Bake 30 minutes or until peppers are tender.

  • 1½ lb green beans, trimmed
  • 2 Tbsp olive oil
  • 1½ tsp onion powder
  • ½ tsp pepper
  • ½ tsp salt

Side Dish Instructions

  1. Preheat oven to 350°F.
  2. Toss green beans with oil, onion powder and pepper; spread into a single layer on a baking sheet.
  3. Bake 15 minutes or until crisp-tender; sprinkle with salt.
