Oven-Fried Corn Flakes Chicken

Kids’ Favorite Green Beans and Scalloped Potatoes

Ingredients

  • 1 large egg
  • 2 Tbsp milk
  • 2 cups crushed corn flakes cereal
  • 2 tsp dried basil
  • ½ tsp salt
  • ¼ tsp pepper
  • 1½ lb boneless, skinless chicken breasts, cut into 2-inch strips

Instructions

  1. Preheat oven to 375°F.
  2. Whisk together egg and milk in a shallow dish.
  3. Stir together crushed corn flakes, basil, salt, and pepper in a separate shallow dish.
  4. Dip chicken in egg mixture, and then in cereal to coat.
  5. Place on a lightly greased rimmed baking sheet.
  6. Bake 15 minutes or until done.

Side Dish Ingredients

  • 2 (14.5-oz) cans cut green beans, rinsed and drained
  • ½ cup packed brown sugar
  • 4 Tbsp butter, melted
  • ½ tsp garlic powder
  • 5 slices bacon
  • 2 (4.7-oz) boxes scalloped potatoes

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Arrange green beans in a baking dish.
  3. Combine brown sugar, butter and garlic powder; pour over beans and place bacon on top.
  4. Bake 25 minutes or until bacon is crisp.
  5. Cook potatoes according to package directions.
