Lemony Chicken and Rice

Ingredients

  • 2 Tbsp butter
  • 2 lb boneless, skinless chicken breasts, cubed
  • 1 (32-oz) carton chicken broth
  • ¼ cup fresh lemon juice
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups long-grain rice
  • 1 Tbsp dried parsley

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Season chicken with salt and pepper; add to skillet, and cook 3 to 4 minutes or until browned.
  3. Place in a 5- to 7-quart slow cooker.
  4. Add 1 cup broth and lemon juice to skillet; bring to a boil, scraping brown bits from pan.
  5. Add to cooker with onion, garlic, remaining broth, rice, and parsley.
  6. Cover and cook on LOW 3 hours or until rice is tender.

Side Dish Ingredients

  • 1 lb green beans, trimmed
  • ¼ cup water

Side Dish Instructions

  1. Place green beans and water in a microwave-safe dish; cover and microwave on HIGH 4 minutes or until crisp-tender.
  2. Drain and season to taste.
