Lemony Chicken and Rice
Steamed Green BeansIngredients
- 2 Tbsp butter
- 2 lb boneless, skinless chicken breasts, cubed
- 1 (32-oz) carton chicken broth
- ¼ cup fresh lemon juice
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups long-grain rice
- 1 Tbsp dried parsley
Instructions
- Melt butter in a large skillet over medium heat.
- Season chicken with salt and pepper; add to skillet, and cook 3 to 4 minutes or until browned.
- Place in a 5- to 7-quart slow cooker.
- Add 1 cup broth and lemon juice to skillet; bring to a boil, scraping brown bits from pan.
- Add to cooker with onion, garlic, remaining broth, rice, and parsley.
- Cover and cook on LOW 3 hours or until rice is tender.
Side Dish Ingredients
- 1 lb green beans, trimmed
- ¼ cup water
Side Dish Instructions
- Place green beans and water in a microwave-safe dish; cover and microwave on HIGH 4 minutes or until crisp-tender.
- Drain and season to taste.
