Pan-Seared Rosemary-Garlic Sirloin Steak
Cauliflower-Potato Mash and Steamed Green Beans
Ingredients
- ½ Tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp dried rosemary, crushed
- ¼ tsp salt
- ¼ tsp pepper
- ½ lb boneless top sirloin steak
Instructions
- Combine oil, garlic, rosemary, salt and pepper; rub all over steak. Cover and chill 1 to 3 hours.
- Cook steak in a grill pan or cast-iron skillet over medium-high heat 5 to 6 minutes per side or to desired doneness. Let stand 10 minutes before slicing.
Side Dish Ingredients
- 1½ cups cauliflower florets
- ¼ lb Yukon Gold potatoes, cut into 1-inch chunks
- 2 Tbsp 2% reduced-fat plain Greek yogurt
- 1 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 1 (12-oz) pkg frozen green beans
Side Dish Instructions
- Bring cauliflower and potatoes to a boil in water to cover in a saucepan; cook 15 minutes or until tender.
- Drain; mash with yogurt, ½ Tbsp oil, and ¼ tsp each salt and pepper.
- Meanwhile, cook beans according to package directions. Transfer to a bowl; toss with ½ Tbsp oil and ¼ tsp each salt and pepper.
