Steakhouse Meatloaf
Mashed Potatoes and Steamed Green Beans
Ingredients
- 1½ lb lean ground beef
- ½ cup whole wheat panko breadcrumbs
- ⅓ cup BPA-free tomato sauce
- ½ small yellow onion, finely chopped
- 1 clove garlic, minced
- 1 large egg, lightly beaten
- 1 Tbsp Montreal steak seasoning
- ¼ tsp kosher salt
- ¼ tsp pepper
Instructions
- Combine all ingredients in a large bowl; shape into a loaf.
- Place meatloaf in a greased 3- to 4-quart slow cooker, reshaping loaf, if necessary, so that there is a ½-inch space around edges of slow cooker.
- Cover and cook on LOW 6 to 7 hours or until no longer pink in center.
- Cut meatloaf into 8 (reserve 4 slices for Open-Faced Meatloaf Sandwiches recipe). Serve remaining meatloaf with mashed potatoes and green beans.
Side Dish Ingredients
- ¾ lb organic red potatoes, cut into 1-inch pieces
- ⅓ cup reduced-fat 2% milk
- 1 Tbsp butter
- ¼ tsp salt
- ¼ tsp pepper
- 1 (12-oz) pkg steam-in-bag green beans
Side Dish Instructions
- Boil potatoes in water to cover in a saucepan 10 minutes or until tender; drain.
- Return to pan; add milk, butter, salt and pepper.
- Mash to desired consistency.
- Steam beans according to package directions.
