Steakhouse Meatloaf

Mashed Potatoes and Steamed Green Beans

Ingredients

  • 1½ lb lean ground beef
  • ½ cup whole wheat panko breadcrumbs
  • ⅓ cup BPA-free tomato sauce
  • ½ small yellow onion, finely chopped
  • 1 clove garlic, minced
  • 1 large egg, lightly beaten
  • 1 Tbsp Montreal steak seasoning
  • ¼ tsp kosher salt
  • ¼ tsp pepper

Instructions

  1. Combine all ingredients in a large bowl; shape into a loaf.
  2. Place meatloaf in a greased 3- to 4-quart slow cooker, reshaping loaf, if necessary, so that there is a ½-inch space around edges of slow cooker.
  3. Cover and cook on LOW 6 to 7 hours or until no longer pink in center.
  4. Cut meatloaf into 8 (reserve 4 slices for Open-Faced Meatloaf Sandwiches recipe). Serve remaining meatloaf with mashed potatoes and green beans.

Side Dish Ingredients

  • ¾ lb organic red potatoes, cut into 1-inch pieces
  • ⅓ cup reduced-fat 2% milk
  • 1 Tbsp butter
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (12-oz) pkg steam-in-bag green beans

Side Dish Instructions

  1. Boil potatoes in water to cover in a saucepan 10 minutes or until tender; drain.
  2. Return to pan; add milk, butter, salt and pepper.
  3. Mash to desired consistency.
  4. Steam beans according to package directions.
