Favorite Lettuce Wraps with Peanut Sauce
Mini Egg Rolls and Mandarin Oranges
Ingredients
- 2 Tbsp olive oil
- 1½ lb ground pork (or use ground turkey)
- ½ tsp salt
- ½ tsp freshly ground pepper
- ½ cup creamy peanut butter
- 2 Tbsp soy sauce
- 2 cloves garlic, minced
- 1 Tbsp grated fresh ginger
- 2 tsp chile-garlic sauce
- 1 small head iceberg lettuce, leaves separated (or use green leaf lettuce)
- ⅓ cup chopped fresh cilantro (optional)
- 1 lime, cut into wedges
Instructions
- Heat oil in a large skillet over medium-high heat; add ground pork, salt and pepper.
- Cook 8 minutes or until pork is crumbled and no longer pink; keep warm.
- Whisk together peanut butter, soy sauce, garlic, ginger and chile-garlic sauce.
- Divide pork among lettuce leaves; drizzle with peanut sauce.
- Sprinkle with cilantro, if desired, and serve with lime wedges.
Side Dish Ingredients
- 1 (10-count) box frozen mini egg rolls
- 1 (15-oz) can mandarin oranges in juice, chilled (see Note)

- Bake egg rolls according to package directions, and serve alongside lettuce wraps.
