Smothered Chicken with Bacon
Broccoli and Baked Potatoes
Ingredients
- 8 slices bacon, chopped
- 2 lb boneless, skinless chicken breasts, halved crosswise
- 1 Tbsp olive oil
- ¾ cup barbecue sauce
- 6 slices Cheddar cheese
Instructions
- Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp.
- Drain on paper towels, reserving drippings in skillet.
- Pound chicken to an even thickness; season with salt and pepper.
- Add oil to drippings in skillet.
- Brown chicken 4 to 5 minutes per side in hot oil over medium-high heat; spread barbecue sauce over chicken.
- Top each with 1 cheese slice; cover and cook 1 minute or until cheese is melted.
- Sprinkle with bacon.

- 2 (12-oz) pkg steam in bag broccoli florets
- 3 large baking potatoes
- Butter (or sour cream)
Side Dish Instructions
- Microwave broccoli according to package directions; pour both packages into a bowl to serve.
- Season with salt and pepper.
- Prick potatoes with a fork; microwave 10 to 15 minutes or until tender.
- Cool to the touch; split potatoes in half.
- Top each potato half with butter and salt and pepper to taste.
