Smothered Chicken with Bacon

Broccoli and Baked Potatoes

Ingredients

  • 8 slices bacon, chopped
  • 2 lb boneless, skinless chicken breasts, halved crosswise
  • 1 Tbsp olive oil
  • ¾ cup barbecue sauce
  • 6 slices Cheddar cheese

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp.
  2. Drain on paper towels, reserving drippings in skillet.
  3. Pound chicken to an even thickness; season with salt and pepper.
  4. Add oil to drippings in skillet.
  5. Brown chicken 4 to 5 minutes per side in hot oil over medium-high heat; spread barbecue sauce over chicken.
  6. Top each with 1 cheese slice; cover and cook 1 minute or until cheese is melted.
  7. Sprinkle with bacon.

Side Dish Ingredients

  • 2 (12-oz) pkg steam in bag broccoli florets
  • 3 large baking potatoes
  • Butter (or sour cream)

Side Dish Instructions

  1. Microwave broccoli according to package directions; pour both packages into a bowl to serve.
  2. Season with salt and pepper.
  3. Prick potatoes with a fork; microwave 10 to 15 minutes or until tender.
  4. Cool to the touch; split potatoes in half.
  5. Top each potato half with butter and salt and pepper to taste.
