Ground Beef Pot Pie
Lemon Pepper Green Beans
Ingredients
- 1 lb ground beef
- 2 Tbsp butter
- ½ cup chopped onion
- 3 Tbsp all-purpose flour
- ¼ tsp dried thyme
- ¼ tsp pepper
- 1 (14.5-oz) can beef broth
- 1 (12-oz) pkg frozen mixed vegetables, thawed
- 1 (15-oz) pkg refrigerated pie crusts
Instructions
- Preheat oven to 400°F.
- Cook ground beef in a skillet over medium heat until browned and crumbly; drain and set aside.
- Melt butter in same skillet over medium heat; add onions, and cook 5 minutes.
- Stir in flour, thyme and pepper; cook 2 minutes, stirring constantly.
- Slowly stir in broth until blended.
- Add vegetables and ground beef; bring to a boil, reduce heat, and simmer 10 minutes or until slightly thickened.
- Unroll 1 pie crust and fit into a 10-inch pie plate. Spoon beef mixture into prepared crust.
- Unroll second pie crust and place over beef mixture, crimping edges of crust to seal.
- Cut 3 slits in top crust to vent. Bake 30 minutes or until crust browns.
Side Dish Ingredients
- 1½ lb green beans, trimmed
- 2 Tbsp butter
- 2 tsp lemon pepper seasoning
Side Dish Instructions
- Coarsely chop green beans; cook in a small amount of boiling water 5 to 6 minutes or until tender.
- Drain well; toss with butter and lemon pepper.
