Ground Beef Pot Pie

Ingredients

  • 1 lb ground beef
  • 2 Tbsp butter
  • ½ cup chopped onion
  • 3 Tbsp all-purpose flour
  • ¼ tsp dried thyme
  • ¼ tsp pepper
  • 1 (14.5-oz) can beef broth
  • 1 (12-oz) pkg frozen mixed vegetables, thawed
  • 1 (15-oz) pkg refrigerated pie crusts

Instructions

  1. Preheat oven to 400°F.
  2. Cook ground beef in a skillet over medium heat until browned and crumbly; drain and set aside.
  3. Melt butter in same skillet over medium heat; add onions, and cook 5 minutes.
  4. Stir in flour, thyme and pepper; cook 2 minutes, stirring constantly.
  5. Slowly stir in broth until blended.
  6. Add vegetables and ground beef; bring to a boil, reduce heat, and simmer 10 minutes or until slightly thickened.
  7. Unroll 1 pie crust and fit into a 10-inch pie plate. Spoon beef mixture into prepared crust.
  8. Unroll second pie crust and place over beef mixture, crimping edges of crust to seal.
  9. Cut 3 slits in top crust to vent. Bake 30 minutes or until crust browns.

Side Dish Ingredients

  • 1½ lb green beans, trimmed
  • 2 Tbsp butter
  • 2 tsp lemon pepper seasoning

Side Dish Instructions

  1. Coarsely chop green beans; cook in a small amount of boiling water 5 to 6 minutes or until tender.
  2. Drain well; toss with butter and lemon pepper.
