Bacon-Wrapped Pork Tenderloin

Ingredients

  • 1½ tsp onion powder
  • 1½ tsp garlic powder
  • 1½ tsp chili powder
  • ½ tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • ⅛ tsp cayenne pepper
  • ½ tsp salt
  • 1½ lb pork tenderloin
  • 2 Tbsp pure maple syrup
  • 6 slices bacon

Instructions

  1. Stir together first 7 ingredients in a small bowl. Rub pork with syrup, and sprinkle with spice mixture.
  2. Wrap pork with bacon, completely covering pork; let stand at room temperature 30 minutes.
  3. Preheat oven to 350°F. Place pork on a rack in a broiler pan coated with cooking spray.
  4. Bake 30 to 40 minutes or until a meat thermometer reads 145°F. Let stand 10 minutes before slicing.

  • ¼ cup chopped walnuts
  • 1 (11-oz) pkg spring mix
  • ½ cup crumbled feta cheese
  • 1 pear, cored and thinly sliced
  • ⅓ cup balsamic vinaigrette

Side Dish Instructions

  1. Cook walnuts in a dry skillet over medium heat until toasted and fragrant; cool.
  2. Combine spring mix, cheese, walnuts, and pear in a salad bowl.
  3. Drizzle with dressing, and toss to coat.
