Bacon-Wrapped Pork Tenderloin
Pear-Feta Salad
Ingredients
- 1½ tsp onion powder
- 1½ tsp garlic powder
- 1½ tsp chili powder
- ½ tsp ground cinnamon
- ⅛ tsp ground nutmeg
- ⅛ tsp cayenne pepper
- ½ tsp salt
- 1½ lb pork tenderloin
- 2 Tbsp pure maple syrup
- 6 slices bacon
Instructions
- Stir together first 7 ingredients in a small bowl. Rub pork with syrup, and sprinkle with spice mixture.
- Wrap pork with bacon, completely covering pork; let stand at room temperature 30 minutes.
- Preheat oven to 350°F. Place pork on a rack in a broiler pan coated with cooking spray.
- Bake 30 to 40 minutes or until a meat thermometer reads 145°F. Let stand 10 minutes before slicing.

- ¼ cup chopped walnuts
- 1 (11-oz) pkg spring mix
- ½ cup crumbled feta cheese
- 1 pear, cored and thinly sliced
- ⅓ cup balsamic vinaigrette
Side Dish Instructions
- Cook walnuts in a dry skillet over medium heat until toasted and fragrant; cool.
- Combine spring mix, cheese, walnuts, and pear in a salad bowl.
- Drizzle with dressing, and toss to coat.
