Chili-Smothered Sweet Potato Fries
Sweet Potato Fries
Ingredients
- 1 Tbsp avocado oil
- 1½ lb grass-fed ground beef
- 1 carrot, diced
- 1 small green bell pepper, chopped
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 (14.5-oz) can diced tomatoes
- 1½ Tbsp chili powder
- 1 Tbsp ground cumin
- ½ tsp dried oregano
- ½ tsp salt
- ½ tsp pepper
- 2 avocados, peeled and diced
- 1 pint grape tomatoes, halved
- 4 radishes, sliced
- ¼ cup chopped fresh cilantro
Instructions
- Heat oil in a large Dutch oven over medium-high heat.
- Add ground beef, carrot, bell pepper, onion and garlic; cook 10 minutes or until beef is browned, stirring to crumble.
- Stir in tomatoes, chili powder, cumin, oregano, salt and pepper.
- Cover and bring to a boil. Reduce heat, uncover, and simmer 20 to 30 minutes.
- Arrange Sweet Potato Fries on a large platter; spoon beef mixture over fries.
- Top with avocado, tomatoes, radishes and cilantro.
Side Dish Ingredients
- 4 large sweet potatoes, peeled and cut into ½-inch-thick wedges
- 2 Tbsp avocado oil
- ½ tsp salt
Side Dish Instructions
- Preheat oven to 425°F.
- Cut sweet potatoes into ½-inch-thick wedges.
- Combine potato wedges, oil and salt on a rimmed baking sheet; toss.
- Bake 30 to 35 minutes or until tender, stirring once.
