Chili-Smothered Sweet Potato Fries

Ingredients

  • 1 Tbsp avocado oil
  • 1½ lb grass-fed ground beef
  • 1 carrot, diced
  • 1 small green bell pepper, chopped
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5-oz) can diced tomatoes
  • 1½ Tbsp chili powder
  • 1 Tbsp ground cumin
  • ½ tsp dried oregano
  • ½ tsp salt
  • ½ tsp pepper
  • 2 avocados, peeled and diced
  • 1 pint grape tomatoes, halved
  • 4 radishes, sliced
  • ¼ cup chopped fresh cilantro

Instructions

  1. Heat oil in a large Dutch oven over medium-high heat.
  2. Add ground beef, carrot, bell pepper, onion and garlic; cook 10 minutes or until beef is browned, stirring to crumble.
  3. Stir in tomatoes, chili powder, cumin, oregano, salt and pepper.
  4. Cover and bring to a boil. Reduce heat, uncover, and simmer 20 to 30 minutes.
  5. Arrange Sweet Potato Fries on a large platter; spoon beef mixture over fries.
  6. Top with avocado, tomatoes, radishes and cilantro.

Side Dish Ingredients

  • 4 large sweet potatoes, peeled and cut into ½-inch-thick wedges
  • 2 Tbsp avocado oil
  • ½ tsp salt

Side Dish Instructions

  1. Preheat oven to 425°F.
  2. Cut sweet potatoes into ½-inch-thick wedges.
  3. Combine potato wedges, oil and salt on a rimmed baking sheet; toss.
  4. Bake 30 to 35 minutes or until tender, stirring once.
