Apple- and Raisin-Stuffed Pork Chops

Ingredients

  • 2 Tbsp olive oil, divided
  • 1 small Gala apple, chopped
  • ¼ cup low-sodium chicken broth
  • 2 Tbsp raisins
  • 1 Tbsp orange juice
  • ½ (6-oz) box cornbread stuffing mix
  • 3 (8-oz) thick-cut boneless pork loin chops
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 450°F.
  2. Heat 1 Tbsp oil in a large ovenproof skillet over medium heat; add apple.
  3. Sauté 3 to 5 minutes or until browned.
  4. Remove from heat to a bowl and stir in broth, raisins, orange juice, and stuffing mix.
  5. Cut a slit down sides of pork chops to create a pocket (don't cut entirely in half); stuff apple mixture into the pocket.
  6. Sprinkle pork with pepper; heat remaining 1 Tbsp oil in skillet.
  7. Brown pork chops 2 minutes per side.
  8. Transfer to oven, and bake 10 to 12 minutes or until chops are done.
  9. Refrigerate leftover pork chop up to 2 days.

  • 1 Tbsp olive oil
  • 1 lb Broccolini, trimmed
  • 1 tsp grated orange rind
  • 2 Tbsp fresh orange juice
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Sauté Broccolini in hot oil in a large skillet over medium-high heat 4 minutes or until crisp-tender.
  2. Add orange rind, orange juice, salt and pepper.
