Apple- and Raisin-Stuffed Pork Chops
Orange Broccolini
Ingredients
- 2 Tbsp olive oil, divided
- 1 small Gala apple, chopped
- ¼ cup low-sodium chicken broth
- 2 Tbsp raisins
- 1 Tbsp orange juice
- ½ (6-oz) box cornbread stuffing mix
- 3 (8-oz) thick-cut boneless pork loin chops
- ¼ tsp pepper
Instructions
- Preheat oven to 450°F.
- Heat 1 Tbsp oil in a large ovenproof skillet over medium heat; add apple.
- Sauté 3 to 5 minutes or until browned.
- Remove from heat to a bowl and stir in broth, raisins, orange juice, and stuffing mix.
- Cut a slit down sides of pork chops to create a pocket (don't cut entirely in half); stuff apple mixture into the pocket.
- Sprinkle pork with pepper; heat remaining 1 Tbsp oil in skillet.
- Brown pork chops 2 minutes per side.
- Transfer to oven, and bake 10 to 12 minutes or until chops are done.
- Refrigerate leftover pork chop up to 2 days.
Side Dish Ingredients
- 1 Tbsp olive oil
- 1 lb Broccolini, trimmed
- 1 tsp grated orange rind
- 2 Tbsp fresh orange juice
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Sauté Broccolini in hot oil in a large skillet over medium-high heat 4 minutes or until crisp-tender.
- Add orange rind, orange juice, salt and pepper.
