Salmon with Honey-Citrus Sauce
Sautéed Balsamic Brussels Sprouts
Ingredients
- ¾ cup fresh orange juice
- 2 Tbsp fresh lemon juice
- 2 Tbsp fresh lime juice
- 2 Tbsp honey
- 1 Tbsp Dijon mustard
- 1 tsp chopped fresh thyme (or use dried)
- 6 (6-oz) salmon fillets
- ½ tsp salt
- ¼ tsp pepper
Instructions
- Combine orange juice, lemon juice, lime juice and honey in a small saucepan .
- Bring to a boil, reduce heat, and simmer 10 minutes or until reduced by half.
- Stir in mustard and thyme.
- Preheat oven to 450°F.
- Place salmon on a foil-lined rimmed baking sheet; sprinkle with salt and pepper.
- Brush salmon with half of orange mixture.
- Bake 10 to 12 minutes or until salmon flakes with a fork.
- Drizzle salmon with remaining orange sauce.
Side Dish Ingredients
- 2 Tbsp olive oil
- 1½ lb Brussels sprouts, trimmed and halved
- 1 tsp bottled minced garlic
- 2 Tbsp balsamic vinegar
- 1 tsp salt
- 1 tsp pepper
Side Dish Instructions
- Heat oil in a large nonstick skillet over medium heat.
- Add Brussels sprouts.
- Cook 5 minutes, stirring occasionally.
- Add garlic, vinegar, salt and pepper.
- Cook 5 to 7 minutes or until vinegar is evaporated.
