Smoky Chipotle Pork Chops

Ingredients

  • 2 tsp ground chipotle chile pepper
  • ½ tsp paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp pepper
  • 6 (6-oz) boneless pork chops
  • 3 Tbsp olive oil

Instructions

  1. Preheat oven to 400°F.
  2. Stir together chipotle pepper, paprika, oregano, salt and pepper in a small bowl; rub over pork chops.
  3. Heat oil in a large nonstick skillet over medium-high.
  4. Brown pork chops 2 minutes per side. Transfer to a greased baking dish.
  5. Bake 8 to 10 minutes or until done.

Side Dish Ingredients

  • 3 Tbsp olive oil
  • 2 pints grape tomatoes
  • 2 (15.5-oz) cans hominy, rinsed and drained
  • 1 Tbsp bottled minced garlic
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ cup sliced green onions

Side Dish Instructions

  1. Heat oil in a large saucepan over medium-high heat; add tomatoes.
  2. Sauté 5 minutes or until tomatoes soften and begin to burst.
  3. Stir in hominy, garlic, salt and pepper; cook 5 minutes longer or until hot.
  4. Stir in green onions before serving.
