Smoky Chipotle Pork Chops
Hominy-Tomato SautéIngredients
- 2 tsp ground chipotle chile pepper
- ½ tsp paprika
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp pepper
- 6 (6-oz) boneless pork chops
- 3 Tbsp olive oil
Instructions
- Preheat oven to 400°F.
- Stir together chipotle pepper, paprika, oregano, salt and pepper in a small bowl; rub over pork chops.
- Heat oil in a large nonstick skillet over medium-high.
- Brown pork chops 2 minutes per side. Transfer to a greased baking dish.
- Bake 8 to 10 minutes or until done.

- 3 Tbsp olive oil
- 2 pints grape tomatoes
- 2 (15.5-oz) cans hominy, rinsed and drained
- 1 Tbsp bottled minced garlic
- ½ tsp salt
- ¼ tsp pepper
- ½ cup sliced green onions
Side Dish Instructions
- Heat oil in a large saucepan over medium-high heat; add tomatoes.
- Sauté 5 minutes or until tomatoes soften and begin to burst.
- Stir in hominy, garlic, salt and pepper; cook 5 minutes longer or until hot.
- Stir in green onions before serving.
