Asian Chicken Lettuce Wraps

Ingredients

  • 1 Tbsp vegetable oil
  • 2 lb ground chicken
  • ½ cup refrigerated ginger-sesame dressing, divided
  • 1 (6.75-oz) pkg rice sticks
  • 1 large head Bibb lettuce, leaves separated
  • 2 cups shredded carrots
  • ½ cup sliced green onions
  • ¼ cup chopped fresh cilantro

Instructions

  1. Heat oil in a large skillet over medium-high heat; add chicken.
  2. Cook 5 minutes or until browned; stir in ¼ cup dressing.
  3. Meanwhile, soak rice sticks according to package directions.
  4. To serve, divide noodles and chicken mixture among lettuce leaves.
  5. Top evenly with carrots, green onions and cilantro; drizzle with remaining ¼ cup dressing.

Side Dish Ingredients

  • 1 (16-oz) pkg frozen edamame in the pod
  • 1 tsp kosher salt

Side Dish Instructions

  1. Cook edamame according to package directions.
  2. Drain and immediately sprinkle edamame with salt.
