Turmeric- and Honey-Glazed Chicken
Mixed Greens with Strawberries and Goat Cheese
Ingredients
- 2 lb boneless, skinless chicken thighs, cubed
- ½ tsp salt
- ¼ tsp pepper
- 2 Tbsp olive oil
- ¼ cup honey
- 3 Tbsp low-sodium soy sauce
- 1 Tbsp bottled minced garlic
- 1 tsp ground turmeric
- 2 (8.8-oz) pouches microwavable basmati rice
Instructions
- Sprinkle chicken thighs with salt and pepper .
- Heat oil in a large nonstick skillet over medium-high heat.
- Add chicken to skillet, and cook, stirring occasionally, 6 to 7 minutes or until done.
- Stir together honey, soy sauce, garlic and turmeric; add to skillet, and cook 2 to 3 minutes, stirring until sauce is thick and bubbly.
- Meanwhile, cook rice according to package directions; serve chicken and sauce over rice.
Side Dish Ingredients
- 1 (10-oz) pkg mixed baby greens
- 1 quart strawberries, hulled and sliced
- ½ red onion, sliced
- ½ cup sliced almonds
- ⅓ cup refrigerated balsamic vinaigrette
- 1 (3-oz) container crumbled goat cheese (or use feta)
Side Dish Instructions
- Combine greens, strawberries, red onion and almonds in a serving bowl; add vinaigrette, and toss to coat.
- Sprinkle with goat cheese.
