Turmeric- and Honey-Glazed Chicken

Ingredients

  • 2 lb boneless, skinless chicken thighs, cubed
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil
  • ¼ cup honey
  • 3 Tbsp low-sodium soy sauce
  • 1 Tbsp bottled minced garlic
  • 1 tsp ground turmeric
  • 2 (8.8-oz) pouches microwavable basmati rice

Instructions

  1. Sprinkle chicken thighs with salt and pepper .
  2. Heat oil in a large nonstick skillet over medium-high heat.
  3. Add chicken to skillet, and cook, stirring occasionally, 6 to 7 minutes or until done.
  4. Stir together honey, soy sauce, garlic and turmeric; add to skillet, and cook 2 to 3 minutes, stirring until sauce is thick and bubbly.
  5. Meanwhile, cook rice according to package directions; serve chicken and sauce over rice.

Side Dish Ingredients

  • 1 (10-oz) pkg mixed baby greens
  • 1 quart strawberries, hulled and sliced
  • ½ red onion, sliced
  • ½ cup sliced almonds
  • ⅓ cup refrigerated balsamic vinaigrette
  • 1 (3-oz) container crumbled goat cheese (or use feta)

Side Dish Instructions

  1. Combine greens, strawberries, red onion and almonds in a serving bowl; add vinaigrette, and toss to coat.
  2. Sprinkle with goat cheese.
