Kale-Spinach Salad

Ingredients
- ⅓ cup honey
- ⅓ cup red wine vinegar
- 2 Tbsp olive oil
- 2 (5-oz) pkg baby kale and spinach blend
- 1 head radicchio, thinly sliced
- 1 cup dried cranberries
- 1 cup chopped pecans
- 1 cup freshly grated Parmesan cheese
Instructions
- Whisk together honey, vinegar and oil in a large bowl.
- Add kale and spinach blend, radicchio, cranberries, pecans and Parmesan; toss.
- Season with salt and pepper to taste.
