Ingredients

  • ⅓ cup honey
  • ⅓ cup red wine vinegar
  • 2 Tbsp olive oil
  • 2 (5-oz) pkg baby kale and spinach blend
  • 1 head radicchio, thinly sliced
  • 1 cup dried cranberries
  • 1 cup chopped pecans
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Whisk together honey, vinegar and oil in a large bowl.
  2. Add kale and spinach blend, radicchio, cranberries, pecans and Parmesan; toss.
  3. Season with salt and pepper to taste.
