Smothered Barbecue Chicken
Sour Cream Mashed Potatoes and Green Beans
Ingredients
- 1½ lb boneless, skinless chicken breasts, cut in half and pounded to an even thickness
- 1 cup barbecue sauce
- ½ cup French fried onions
Instructions
- Preheat oven to 350°F.
- Place chicken in a greased 13-x 9-inch baking dish; pour barbecue sauce over chicken.
- Bake 15 minutes; sprinkle with onions, and bake 5 minutes longer or until chicken is done.
- Serve with additional barbecue sauce, if desired.

- 2 lb Yukon Gold potatoes, cut into 1-inch pieces
- ½ cup milk
- 1 (8-oz) carton sour cream
- 1 (16-oz) pkg frozen green beans
Side Dish Instructions
- Bring potatoes and salted water to cover to a boil in a large Dutch oven.
- Cook 10 minutes or until tender; drain.
- Mash potatoes to desired consistency.
- Stir in milk and sour cream; season with salt and pepper to taste.
- Cook green beans according to package directions; season to taste.
