Smothered Barbecue Chicken

Sour Cream Mashed Potatoes and Green Beans

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut in half and pounded to an even thickness
  • 1 cup barbecue sauce
  • ½ cup French fried onions

Instructions

  1. Preheat oven to 350°F.
  2. Place chicken in a greased 13-x 9-inch baking dish; pour barbecue sauce over chicken.
  3. Bake 15 minutes; sprinkle with onions, and bake 5 minutes longer or until chicken is done.
  4. Serve with additional barbecue sauce, if desired.

Side Dish Ingredients

  • 2 lb Yukon Gold potatoes, cut into 1-inch pieces
  • ½ cup milk
  • 1 (8-oz) carton sour cream
  • 1 (16-oz) pkg frozen green beans

Side Dish Instructions

  1. Bring potatoes and salted water to cover to a boil in a large Dutch oven.
  2. Cook 10 minutes or until tender; drain.
  3. Mash potatoes to desired consistency.
  4. Stir in milk and sour cream; season with salt and pepper to taste.
  5. Cook green beans according to package directions; season to taste.
