Skillet Mozzarella Chicken Caprese

Ingredients

  • 2 Tbsp extra virgin olive oil
  • 6 (6-oz) boneless, skinless chicken breasts
  • 1 (24-oz) jar all-natural marinara sauce (such as Rao's)
  • 1 (8-oz) ball fresh mozzarella cheese, thinly sliced
  • 1 pint grape tomatoes, cut in half
  • 1 (1-oz) pkg fresh basil, thinly sliced
  • 2 Tbsp balsamic glaze (or use balsamic vinegar)

Instructions

  1. Preheat broiler.
  2. Heat oil in a large cast-iron skillet over medium-high heat.
  3. Add chicken to pan; cook 4 minutes per side.
  4. Spoon marinara sauce over and around chicken; cook 5 minutes or until chicken is done.
  5. Layer cheese evenly over each chicken breast; sprinkle with tomatoes.
  6. Broil 1 to 2 minutes or until cheese is bubbly and browned.
  7. Sprinkle with basil; drizzle with glaze.
  8. Serve over Basil Zucchini "Noodles.".

Side Dish Ingredients

  • 2 Tbsp extra virgin olive oil
  • 1½ Tbsp bottled minced garlic
  • ¼ cup chopped fresh basil
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 2 (10.7-oz) pkg zucchini noodles (such as Veggie Noodle Co.)

Side Dish Instructions

  1. Combine oil, garlic, basil, salt and pepper in a large bowl; add zucchini, and toss to coat.
  2. Let stand at least 10 minutes before serving.
