Chicken and Sausage Jambalaya
Cauli-Rice with Green Onion
Ingredients
- ¾ lb boneless, skinless chicken breasts, cut into 2-inch pieces
- ½ (14-oz) pkg smoked kielbasa sausage, cut into ½-inch slices
- 1 (14.5-oz) can diced tomatoes
- ½ cup diced onion
- ½ cup diced red bell pepper
- 1 stalk celery, diced
- ½ cup chicken broth
- 2 cloves garlic, minced
- 1 tsp Creole seasoning
- 1 bay leaf
Instructions
- Combine all ingredients in a 3- to 4-quart slow cooker.
- Cover and cook on LOW 6 to 7 hours. Discard bay leaf.
Side Dish Ingredients
- 1 (10-oz) pkg cauliflower florets
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- ¾ cup chicken broth
- 1 green onion, sliced
Side Dish Instructions
- Pulse cauliflower in a food processor until rice-like consistency.
- Sauté garlic in hot oil in a saucepan over medium-high heat 1 minute or until golden; add cauliflower. Cook 2 minutes.
- Stir in broth; cover and cook 15 minutes or until cauliflower is tender.
- Season with salt and pepper to taste. Stir in green onion.
