Chicken and Sausage Jambalaya

Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut into 2-inch pieces
  • ½ (14-oz) pkg smoked kielbasa sausage, cut into ½-inch slices
  • 1 (14.5-oz) can diced tomatoes
  • ½ cup diced onion
  • ½ cup diced red bell pepper
  • 1 stalk celery, diced
  • ½ cup chicken broth
  • 2 cloves garlic, minced
  • 1 tsp Creole seasoning
  • 1 bay leaf

Instructions

  1. Combine all ingredients in a 3- to 4-quart slow cooker.
  2. Cover and cook on LOW 6 to 7 hours. Discard bay leaf.

Side Dish Ingredients

  • 1 (10-oz) pkg cauliflower florets
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • ¾ cup chicken broth
  • 1 green onion, sliced

Side Dish Instructions

  1. Pulse cauliflower in a food processor until rice-like consistency.
  2. Sauté garlic in hot oil in a saucepan over medium-high heat 1 minute or until golden; add cauliflower. Cook 2 minutes.
  3. Stir in broth; cover and cook 15 minutes or until cauliflower is tender.
  4. Season with salt and pepper to taste. Stir in green onion.
