Tortellini with Spinach, Mushrooms, and Bacon
Roasted Broccolini
Ingredients
- 1 (9-oz) pkg refrigerated cheese tortellini
- 6 slices bacon, chopped
- 1 Tbsp butter
- 1 (8-oz) pkg sliced baby portobello mushrooms
- 1 Tbsp bottled minced garlic
- 1 (6-oz) pkg baby spinach
- ¼ cup shredded Parmesan cheese
Instructions
- Cook tortellini according to package directions.
- Meanwhile, cook bacon in a skillet over medium heat until crisp; drain on paper towels, reserving ½ Tbsp drippings in skillet.
- Add butter; stir until melted.
- Add mushrooms and garlic, and cook 6 minutes or until tender; gradually stir in spinach until wilted.
- Add pasta and bacon, toss. Top with cheese.

- 1 bunch broccolini, trimmed
- ½ Tbsp olive oil
- 1 tsp bottled minced garlic
Side Dish Instructions
- Preheat oven to 425°F.
- Combine broccolini, oil and garlic on a rimmed baking sheet.
- Bake 8 minutes or until tender. Season to taste.
