Tortellini with Spinach, Mushrooms, and Bacon

Ingredients

  • 1 (9-oz) pkg refrigerated cheese tortellini
  • 6 slices bacon, chopped
  • 1 Tbsp butter
  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • 1 Tbsp bottled minced garlic
  • 1 (6-oz) pkg baby spinach
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Cook tortellini according to package directions.
  2. Meanwhile, cook bacon in a skillet over medium heat until crisp; drain on paper towels, reserving ½ Tbsp drippings in skillet.
  3. Add butter; stir until melted.
  4. Add mushrooms and garlic, and cook 6 minutes or until tender; gradually stir in spinach until wilted.
  5. Add pasta and bacon, toss. Top with cheese.

Side Dish Ingredients

  • 1 bunch broccolini, trimmed
  • ½ Tbsp olive oil
  • 1 tsp bottled minced garlic

Side Dish Instructions

  1. Preheat oven to 425°F.
  2. Combine broccolini, oil and garlic on a rimmed baking sheet.
  3. Bake 8 minutes or until tender. Season to taste.
