Shrimp Club Salad

Ingredients

  • 1½ lb large peel-on shrimp
  • 1 (16-oz) pkg bacon, chopped
  • 1 (3-count) pkg Romaine lettuce hearts, torn into bite-sized pieces
  • 1 pint grape tomatoes, cut in half
  • 2 avocados, peeled and diced
  • 1 (6-oz) pkg shredded Parmesan cheese
  • 1 cup Ranch dressing

Instructions

  1. Boil shrimp in boiling salted water until pink and firm, about 2 minutes; drain well and peel shrimp.
  2. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  3. Toss together lettuce, tomatoes, avocados, cheese, shrimp and bacon in a large bowl. Drizzle with dressing; toss.
