Chicken Tikka Masala
Basmati Rice with Peas
Ingredients
- ½ lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 Tbsp garam masala
- ¼ tsp salt
- ¼ tsp pepper
- ¾ cup diced onion
- ½ Tbsp olive oil
- 1 (14.5-oz) can no-salt-added diced tomatoes
- 1 tsp minced ginger
- 1 tsp fresh lemon juice
- ⅓ cup fat-free plain Greek yogurt
Instructions
- Season chicken with ½ Tbsp garam masala, ⅛ tsp salt, and pepper.
- Cook chicken and onion in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until lightly browned and done.
- Stir in tomatoes, ginger, ⅛ tsp salt, and ½ Tbsp garam masala.
- Cook 10 minutes or until sauce is slightly reduced; stir in lemon juice and yogurt until blended.

- 1 (8.5-oz) pouch microwavable brown basmati rice
- ½ cup frozen peas
Side Dish Instructions
- Cook rice according to package directions.
- Cook peas according to package directions; toss with rice.
