Chicken Tikka Masala

Ingredients

  • ½ lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 Tbsp garam masala
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¾ cup diced onion
  • ½ Tbsp olive oil
  • 1 (14.5-oz) can no-salt-added diced tomatoes
  • 1 tsp minced ginger 
  • 1 tsp fresh lemon juice
  • ⅓ cup fat-free plain Greek yogurt

Instructions

  1. Season chicken with ½ Tbsp garam masala, ⅛ tsp salt, and pepper.
  2. Cook chicken and onion in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until lightly browned and done.
  3. Stir in tomatoes, ginger, ⅛ tsp salt, and ½ Tbsp garam masala.
  4. Cook 10 minutes or until sauce is slightly reduced; stir in lemon juice and yogurt until blended.

Side Dish Ingredients

  • 1 (8.5-oz) pouch microwavable brown basmati rice
  • ½ cup frozen peas

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook peas according to package directions; toss with rice.
