Skillet Chicken Cordon Bleu
Mushroom Rice and Steamed Green Beans
Ingredients
- ½ lb boneless, skinless chicken breasts, halved crosswise
- 2 thin slices deli ham
- 2 thin slices Swiss cheese
- 1 Tbsp Dijon mustard
- ¼ cup panko breadcrumbs
- ½ Tbsp olive oil
- 1 Tbsp butter
- 1 Tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F.
- Pound chicken to an even thickness; sprinkle with salt and pepper. Top each piece with 1 slice ham and 1 slice cheese.
- Roll up, and secure with toothpicks.
- Brush chicken with mustard, and coat in breadcrumbs.
- Heat oil and butter in a cast-iron or other ovenproof skillet over medium-high heat.
- Brown coated chicken 2 minutes per side; transfer skillet to oven.
- Bake 10 minutes or until chicken is done; sprinkle with parsley before serving.

- ½ cup long-grain rice
- 1 Tbsp butter
- ¼ cup chopped onion
- 1 (8-oz) pkg sliced mushrooms
- 1 Tbsp chopped fresh parsley
- 1 (12-oz) pkg frozen green beans
Side Dish Instructions
- Cook rice according to package directions.
- Melt butter in a skillet over medium-high heat.
- Add onion and mushrooms; cook 8 minutes or until tender.
- Stir in rice, parsley, and salt and pepper to taste.
- Steam green beans according to package directions.
