Pesto Shrimp and Couscous Packets
Lemon Green BeansIngredients
- 1½ lb peeled and deveined medium-size shrimp
- ¼ cup basil pesto
- 2 (5.8-oz) boxes roasted garlic and olive oil couscous
- 5 Roma tomatoes, cut into thin slices
- ⅓ cup crumbled feta cheese
Instructions
- Preheat oven to 425°F.
- Tear 6 sheets of heavy-duty foil into six (18-inch) squares.
- Stir together shrimp and pesto; set aside.
- Prepare couscous according to package directions; divide among foil squares and top with tomato slices.
- Arrange shrimp over tomatoes; sprinkle with cheese.
- Bring up edges of foil over shrimp mixture, and fold together to enclose filling.
- Roll up ends of foil to completely close packets.
- Place packets in a single layer on a large baking sheet.
- Bake 15 to 20 minutes or until shrimp turn pink.

- 2 (12-oz) pkg frozen steam-in-bag green beans
- 2 Tbsp butter, melted
- 2 Tbsp fresh lemon juice

- Steam green beans according to package directions; toss with melted butter and lemon juice.
