Ham Steak with Orange-Pineapple Glaze
Roasted Sweet Potatoes and Onion
Ingredients
- 2 lb fully-cooked boneless ham steak
- 1 cup orange juice
- 1 (8-oz) can pineapple tidbits in juice
- 1 (2-oz) pouch dried cranberries
- 1 Tbsp Dijon mustard
- 1 Tbsp cold water
- 1 tsp cornstarch
Instructions
- Cook ham in a large skillet over medium-high heat 3 to 4 minutes per side or until thoroughly heated.
- Remove from skillet.
- Add orange juice; cook 2 minutes.
- Stir in pineapple with juice, cranberries and mustard.
- Stir together cold water and cornstarch; add to orange mixture.
- Bring to a boil; cook 1 minute or until thickened.
- Serve with ham.
Side Dish Ingredients
- 1½ lb sweet potatoes, peeled and cut into ½-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 onion, coarsely chopped
- 4 Tbsp olive oil
- 1 tsp salt
- 1 tsp ground cinnamon
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F.
- Toss potatoes, bell pepper and onion with oil, salt, cinnamon and pepper on a greased rimmed baking sheet.
- Bake 25 to 30 minutes or until tender.
