Ham Steak with Orange-Pineapple Glaze

Ingredients

  • 2 lb fully-cooked boneless ham steak
  • 1 cup orange juice
  • 1 (8-oz) can pineapple tidbits in juice
  • 1 (2-oz) pouch dried cranberries
  • 1 Tbsp Dijon mustard
  • 1 Tbsp cold water
  • 1 tsp cornstarch

Instructions

  1. Cook ham in a large skillet over medium-high heat 3 to 4 minutes per side or until thoroughly heated.
  2. Remove from skillet.
  3. Add orange juice; cook 2 minutes.
  4. Stir in pineapple with juice, cranberries and mustard.
  5. Stir together cold water and cornstarch; add to orange mixture.
  6. Bring to a boil; cook 1 minute or until thickened.
  7. Serve with ham.

Side Dish Ingredients

  • 1½ lb sweet potatoes, peeled and cut into ½-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 onion, coarsely chopped
  • 4 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Toss potatoes, bell pepper and onion with oil, salt, cinnamon and pepper on a greased rimmed baking sheet.
  3. Bake 25 to 30 minutes or until tender.
