Lemon-Garlic Pork Chops

Ingredients

  • 1 lemon
  • 3 cloves garlic, minced
  • 1 Tbsp Italian seasoning
  • 1 tsp salt
  • 6 thin-sliced boneless center-cut pork chops
  • 3 Tbsp olive oil
  • 1 tsp dried basil
  • 2 Tbsp butter

Instructions

  1. Grate rind from lemon to equal 1 tsp. Squeeze juice.
  2. Combine lemon rind, garlic, Italian seasoning, and salt in a small bowl; rub over pork. Cover and chill 1 hour.
  3. Cook pork, in batches, in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 2 minutes per side or until done. Remove from skillet.
  4. Reduce heat to medium. Add lemon juice to skillet, stirring with a wooden spoon to loosen browned bits.
  5. Remove from heat; stir in 1 Tbsp oil, basil, and butter. Spoon sauce over pork.

Side Dish Ingredients

  • 3 sweet potatoes, peeled and chopped
  • 2 Gala or Braeburn apples, cored and chopped
  • 6 Tbsp butter, cut into small cubes
  • ½ cup light brown sugar
  • 1 tsp pumpkin pie spice
  • ½ tsp ground ginger
  • ½ tsp salt

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Combine potatoes, apples, butter, brown sugar, pie spice, ginger, and salt on a rimmed baking sheet.
  3. Bake 25 minute or until potatoes are tender.
