Lemon-Garlic Pork Chops
Candied Sweet Potatoes and Apples
Ingredients
- 1 lemon
- 3 cloves garlic, minced
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 6 thin-sliced boneless center-cut pork chops
- 3 Tbsp olive oil
- 1 tsp dried basil
- 2 Tbsp butter
Instructions
- Grate rind from lemon to equal 1 tsp. Squeeze juice.
- Combine lemon rind, garlic, Italian seasoning, and salt in a small bowl; rub over pork. Cover and chill 1 hour.
- Cook pork, in batches, in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 2 minutes per side or until done. Remove from skillet.
- Reduce heat to medium. Add lemon juice to skillet, stirring with a wooden spoon to loosen browned bits.
- Remove from heat; stir in 1 Tbsp oil, basil, and butter. Spoon sauce over pork.

- 3 sweet potatoes, peeled and chopped
- 2 Gala or Braeburn apples, cored and chopped
- 6 Tbsp butter, cut into small cubes
- ½ cup light brown sugar
- 1 tsp pumpkin pie spice
- ½ tsp ground ginger
- ½ tsp salt
Side Dish Instructions
- Preheat oven to 400°F.
- Combine potatoes, apples, butter, brown sugar, pie spice, ginger, and salt on a rimmed baking sheet.
- Bake 25 minute or until potatoes are tender.
