Chicken Fried Rice Bowls

Ingredients

  • 2 (8.8-oz) pouches microwavable whole grain brown rice
  • 1 Tbsp vegetable oil
  • 1 red bell pepper, chopped
  • 1 cup matchstick carrots
  • 1 cup frozen peas
  • 6 cloves garlic, minced
  • 1 Tbsp minced ginger
  • 1 rotisserie chicken, shredded
  • ¼ cup soy sauce
  • 2 tsp sesame oil

Instructions

  1. Cook rice according to package directions; cool completely (chill, if time allows).
  2. Heat oil in a large nonstick skillet over medium-high heat; add bell pepper, carrots, peas, garlic and ginger.
  3. Cook, stirring, 3 to 4 minutes or until crisp-tender.
  4. Stir in chicken, cooled rice, soy sauce and sesame oil.
  5. Cook, stirring, 2 to 3 minutes or until heated. Season with salt and pepper to taste.
  6. Serve in bowls with additional soy sauce.

Side Dish Ingredients

  • ½ (4-lb) pkg frozen potstickers (chicken and vegetable dumplings)

Side Dish Instructions

  1. Cook potstickers in a large nonstick skillet according to package directions.
