Fire-Roasted Tomato Beef Short Ribs

Ingredients

  • 1 lb bone-in beef short ribs (or use boneless chuck roast)
  • ½ Tbsp Montreal steak seasoning
  • 1 cup low-sodium beef broth
  • 1 (5-oz) pkg sliced sweet onions
  • ½ Tbsp bottled minced garlic
  • 1 (14.5-oz) can fire-roasted diced tomatoes

Instructions

  1. Sprinkle ribs with steak seasoning, and place in a 3- to 4-quart slow cooker.
  2. Top with broth, onions, garlic and tomatoes.
  3. Cover and cook on LOW 6 to 8 hours or until meat is tender; serve over grits.

Side Dish Ingredients

  • ½ cup quick-cooking grits
  • ⅓ cup shredded Parmesan cheese
  • ⅛ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook grits according to package directions.
  2. Stir in Parmesan cheese, salt and pepper.
