Fire-Roasted Tomato Beef Short Ribs
Parmesan Grits
Ingredients
- 1 lb bone-in beef short ribs (or use boneless chuck roast)
- ½ Tbsp Montreal steak seasoning
- 1 cup low-sodium beef broth
- 1 (5-oz) pkg sliced sweet onions
- ½ Tbsp bottled minced garlic
- 1 (14.5-oz) can fire-roasted diced tomatoes
Instructions
- Sprinkle ribs with steak seasoning, and place in a 3- to 4-quart slow cooker.
- Top with broth, onions, garlic and tomatoes.
- Cover and cook on LOW 6 to 8 hours or until meat is tender; serve over grits.
Side Dish Ingredients
- ½ cup quick-cooking grits
- ⅓ cup shredded Parmesan cheese
- ⅛ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook grits according to package directions.
- Stir in Parmesan cheese, salt and pepper.
