Asian Pork and Vegetable Stir-Fry
Cucumber-Onion SaladIngredients
- 2 Tbsp olive oil
- 1 (12-oz) pkg broccoli florets
- 1 organic red bell pepper, thinly sliced
- 2 Tbsp minced fresh ginger
- ½ cup low-sodium chicken broth
- 2 Tbsp chili-garlic sauce
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp natural peanut butter
- Reserved cooked pork (from Garlic-Roasted Pork recipe), chopped
- 1 (16-oz) pkg angel hair coleslaw
- 4 green onions, thinly sliced
Instructions
- Heat oil in a large skillet over medium-high heat.
- Add broccoli, bell pepper, and ginger; cook, stirring occasionally, 4 minutes.
- Add broth, chili sauce, soy sauce, and almond butter; reduce heat to low, and cook 1 minute.
- Stir in pork, coleslaw, and green onions; cook until thoroughly heated.
Side Dish Ingredients
- 1 large organic cucumber, sliced
- ½ sweet onion, thinly sliced
- 3 Tbsp rice vinegar
- 1½ Tbsp olive oil
- 1 tsp honey
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Toss together all ingredients in a large bowl.
- Let stand 30 minutes before serving.
