Asian Pork and Vegetable Stir-Fry

Ingredients

  • 2 Tbsp olive oil
  • 1 (12-oz) pkg broccoli florets
  • 1 organic red bell pepper, thinly sliced
  • 2 Tbsp minced fresh ginger
  • ½ cup low-sodium chicken broth
  • 2 Tbsp chili-garlic sauce
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp natural peanut butter
  • Reserved cooked pork (from Garlic-Roasted Pork recipe), chopped
  • 1 (16-oz) pkg angel hair coleslaw
  • 4 green onions, thinly sliced

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add broccoli, bell pepper, and ginger; cook, stirring occasionally, 4 minutes.
  3. Add broth, chili sauce, soy sauce, and almond butter; reduce heat to low, and cook 1 minute.
  4. Stir in pork, coleslaw, and green onions; cook until thoroughly heated.

Side Dish Ingredients

  • 1 large organic cucumber, sliced
  • ½ sweet onion, thinly sliced
  • 3 Tbsp rice vinegar
  • 1½ Tbsp olive oil
  • 1 tsp honey
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
  2. Let stand 30 minutes before serving.
