Vegetable Nachos Grande

Ingredients
- 1½ Tbsp canola oil
- 1½ (16-oz) pkg frozen pepper stir-fry (peppers and onions)
- 1½ Tbsp salt-free Mexican seasoning
- 9 oz tortilla chips
- 1 (16-oz) can fat-free refried beans
- ¾ cup shredded reduced-fat Mexican blend cheese
- 2 romaine lettuce hearts, shredded
- 1 cup refrigerated salsa
- 3 avocados, peeled and chopped
Instructions
- Preheat oven to 350°F.
- Heat oil in a large nonstick skillet over medium-high heat; add fajita mix and Mexican seasoning.
- Sauté 10 minutes or until tender.
- Arrange tortilla chips on a foil-lined baking sheet; top with beans, bell pepper mixture and cheese.
- Bake 10 minutes or until cheese is melted; top with lettuce, salsa and avocado just before serving.
