Vegetable Nachos Grande

Ingredients

  • 1½ Tbsp canola oil
  • 1½ (16-oz) pkg frozen pepper stir-fry (peppers and onions)
  • 1½ Tbsp salt-free Mexican seasoning
  • 9 oz tortilla chips
  • 1 (16-oz) can fat-free refried beans
  • ¾ cup shredded reduced-fat Mexican blend cheese
  • 2 romaine lettuce hearts, shredded
  • 1 cup refrigerated salsa
  • 3 avocados, peeled and chopped

Instructions

  1. Preheat oven to 350°F.
  2. Heat oil in a large nonstick skillet over medium-high heat; add fajita mix and Mexican seasoning.
  3. Sauté 10 minutes or until tender.
  4. Arrange tortilla chips on a foil-lined baking sheet; top with beans, bell pepper mixture and cheese.
  5. Bake 10 minutes or until cheese is melted; top with lettuce, salsa and avocado just before serving.
