Broiled Chicken Sausage Sandwiches
Tangy Cucumbers
Ingredients
- 3 Roma tomatoes, finely chopped
- 2 Tbsp finely chopped onion
- 1½ tsp sugar
- 1½ tsp red wine vinegar
- ¼ tsp crushed red pepper
- 6 (3-oz) fully-cooked chicken-apple sausages
- 6 (1.5-oz) whole-wheat hot dog buns
Instructions
- Preheat broiler.
- Combine tomato, onion, sugar, vinegar and red pepper in a bowl; set aside.
- Cook sausages according to package directions.
- Broil buns 1 minute or until lightly toasted (watch carefully not to burn).
- Fill buns with sausages and top with tomato mixture.

- 3 cucumbers, thinly sliced
- 2 Tbsp extra virgin olive oil
- 1½ Tbsp red wine vinegar
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Toss all ingredients in a bowl; let stand 15 minutes.
