Maple Syrup Chia Pudding with Bananas and Pecans

Ingredients
- ⅓ cup chia seeds
- ¼ cup water
- 1 (13.5-oz) can unsweetened coconut milk
- 3 Tbsp pure maple syrup, divided
- ⅛ tsp salt
- ½ cup raw pecans
- 2 bananas, sliced
Instructions
- Combine chia seeds, water, coconut milk, 1 Tbsp maple syrup and salt. Cover and refrigerate overnight.
- Toast pecans in a dry skillet over medium heat 2 to 3 minutes or until fragrant.
- Top each serving of pudding evenly with pecans, bananas, and remaining 2 Tbsp maple syrup.
