Maple Syrup Chia Pudding with Bananas and Pecans

Ingredients

  • ⅓ cup chia seeds
  • ¼ cup water
  • 1 (13.5-oz) can unsweetened coconut milk
  • 3 Tbsp pure maple syrup, divided
  • ⅛ tsp salt
  • ½ cup raw pecans
  • 2 bananas, sliced

Instructions

  1. Combine chia seeds, water, coconut milk, 1 Tbsp maple syrup and salt. Cover and refrigerate overnight.
  2. Toast pecans in a dry skillet over medium heat 2 to 3 minutes or until fragrant.
  3. Top each serving of pudding evenly with pecans, bananas, and remaining 2 Tbsp maple syrup.
