Cottage Pie
Spring Mix SaladIngredients
- 1½ lb lean ground beef
- 1½ cups diced onion
- 1 (16-oz) pkg frozen peas and carrots
- 1 (14.5-oz) can low-sodium beef broth
- 2 Tbsp cornstarch
- 1 Tbsp Worcestershire sauce
- 1 Tbsp tomato paste
- ¼ tsp salt
- ½ tsp pepper
- 1 (24-oz) container refrigerated mashed potatoes
Instructions
- Cook ground beef and onion in a large skillet over medium heat 8 minutes or until meat is browned and onion is tender. Add peas and carrots.
- Whisk together broth, cornstarch, Worcestershire sauce, tomato paste, salt, and pepper.
- Add broth mixture to skillet. Cook 3 to 5 minutes or until sauce is thickened. Transfer to a broiler-safe 3-quart baking dish.
- Meanwhile, preheat broiler with oven rack on second shelf. Prepare mashed potatoes according to package directions.
- Top beef mixture with mashed potatoes.
- Broil 8 to 10 minutes or until browned and bubbly.

- 2 Tbsp white wine vinegar
- 1½ Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 2 (5-oz) pkg spring mix
Side Dish Instructions
- Whisk together first 4 ingredients a large bowl. Add lettuce, tossing well.
