Pork Roast with Carrots and Red Onions

Ingredients

  • 1 Tbsp Montreal steak seasoning (or use an organic no-salt seasoning)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 (2½- to 3-lb) boneless pork roast, trimmed
  • 2 Tbsp olive oil
  • 1 (16-oz) pkg baby carrots
  • 2 red onions, cut into wedges
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ¼ cup dry red wine (or use more broth)

Instructions

  1. Combine first 3 ingredients; rub mixture over pork.
  2. Cook pork in hot oil in a large skillet 10 minutes or until browned on all sides.
  3. Place carrots and onions in a 5- or 6-quart slow cooker; top with pork.
  4. Sprinkle pork with garlic; pour in broth and wine.
  5. Cover and cook on LOW 8 hours or until roast is tender.

Side Dish Ingredients

  • 1½ lb organic red potatoes, cut into chunks
  • 2 cloves garlic, smashed
  • ½ cup low-sodium chicken broth
  • 2 Tbsp olive oil
  • 1 Tbsp fresh lemon juice
  • 1 tsp grated lemon rind
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Bring potatoes, garlic, and water to cover to a boil in a medium saucepan; reduce heat, and simmer 15 minutes or until tender.
  2. Drain; return potatoes and garlic to the saucepan.
  3. Add broth, oil, lemon juice, rind, salt and pepper to potatoes; mash with a potato masher to desired consistency.
