Pork Roast with Carrots and Red Onions
Lemon Potatoes with Smashed GarlicIngredients
- 1 Tbsp Montreal steak seasoning (or use an organic no-salt seasoning)
- 1 tsp salt
- 1 tsp pepper
- 1 (2½- to 3-lb) boneless pork roast, trimmed
- 2 Tbsp olive oil
- 1 (16-oz) pkg baby carrots
- 2 red onions, cut into wedges
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ¼ cup dry red wine (or use more broth)
Instructions
- Combine first 3 ingredients; rub mixture over pork.
- Cook pork in hot oil in a large skillet 10 minutes or until browned on all sides.
- Place carrots and onions in a 5- or 6-quart slow cooker; top with pork.
- Sprinkle pork with garlic; pour in broth and wine.
- Cover and cook on LOW 8 hours or until roast is tender.
Side Dish Ingredients
- 1½ lb organic red potatoes, cut into chunks
- 2 cloves garlic, smashed
- ½ cup low-sodium chicken broth
- 2 Tbsp olive oil
- 1 Tbsp fresh lemon juice
- 1 tsp grated lemon rind
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Bring potatoes, garlic, and water to cover to a boil in a medium saucepan; reduce heat, and simmer 15 minutes or until tender.
- Drain; return potatoes and garlic to the saucepan.
- Add broth, oil, lemon juice, rind, salt and pepper to potatoes; mash with a potato masher to desired consistency.
