Bacon-Wrapped Chicken with Avocado Sauce

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • 1 Tbsp chili powder
  • ¼ tsp cayenne pepper
  • 12 slices nitrite-free bacon
  • 1 avocado, halved and pitted
  • 1 clove garlic
  • ⅓ cup water
  • 2 Tbsp fresh cilantro leaves
  • 1½ Tbsp fresh lime juice
  • 1 tsp raw honey

Instructions

  1. Preheat oven to 425°F.
  2. Sprinkle chicken with chili powder, cayenne pepper and desired amount of salt.
  3. Wrap each piece of chicken with 2 slices of bacon.
  4. Heat a large nonstick skillet over medium-high heat; brown chicken, in batches, 3 minutes per side.
  5. Transfer chicken to a foil-lined baking sheet.
  6. Bake 10 minutes or until chicken is done and bacon is crisp.
  7. Meanwhile, process avocado, garlic, water, cilantro, lime juice and honey in a blender until smooth; season with salt and pepper to taste.
  8. Serve sauce with chicken.

Side Dish Ingredients

  • 1 (16-oz) pkg tricolor coleslaw mix
  • ¼ cup chopped fresh cilantro
  • 2 jalapeño peppers, seeded and minced
  • 2 Tbsp fresh lime juice
  • 1 Tbsp extra virgin olive oil
  • 1 tsp raw honey
  • 1 tsp ground cumin

Side Dish Instructions

  1. Toss together coleslaw, cilantro, jalapeños, lime juice, oil, honey and cumin in a large bowl.
  2. Let stand 10 minutes. Season with salt to taste.
