Bacon-Wrapped Chicken with Avocado Sauce
Cumin-Lime Slaw
Ingredients
- 6 (6-oz) boneless, skinless chicken breasts
- 1 Tbsp chili powder
- ¼ tsp cayenne pepper
- 12 slices nitrite-free bacon
- 1 avocado, halved and pitted
- 1 clove garlic
- ⅓ cup water
- 2 Tbsp fresh cilantro leaves
- 1½ Tbsp fresh lime juice
- 1 tsp raw honey
Instructions
- Preheat oven to 425°F.
- Sprinkle chicken with chili powder, cayenne pepper and desired amount of salt.
- Wrap each piece of chicken with 2 slices of bacon.
- Heat a large nonstick skillet over medium-high heat; brown chicken, in batches, 3 minutes per side.
- Transfer chicken to a foil-lined baking sheet.
- Bake 10 minutes or until chicken is done and bacon is crisp.
- Meanwhile, process avocado, garlic, water, cilantro, lime juice and honey in a blender until smooth; season with salt and pepper to taste.
- Serve sauce with chicken.
Side Dish Ingredients
- 1 (16-oz) pkg tricolor coleslaw mix
- ¼ cup chopped fresh cilantro
- 2 jalapeño peppers, seeded and minced
- 2 Tbsp fresh lime juice
- 1 Tbsp extra virgin olive oil
- 1 tsp raw honey
- 1 tsp ground cumin
Side Dish Instructions
- Toss together coleslaw, cilantro, jalapeños, lime juice, oil, honey and cumin in a large bowl.
- Let stand 10 minutes. Season with salt to taste.
