Baked Brie with Roasted Cranberry Compote

Ingredients
- 1½ cups cranberries
- ¼ cup orange juice
- 2 Tbsp honey
- ½ Tbsp minced fresh rosemary
- 2 Tbsp salted butter
- ½ cup chopped pecans
- ½ (17.3-oz) pkg frozen puff pastry, thawed
- 1 (8-oz) round brie cheese
- 1 large egg, lightly beaten
- 1 (9.75-oz) pkg multigrain crispbread
- 1 (4.25-oz) pkg table water crackers
- 2 Granny Smith apples, sliced
- 2 Honeycrisp apples, sliced
Instructions
- Cook cranberries, orange juice, honey, and rosemary over medium heat in a saucepan 5 minutes, stirring frequently or until mixture is very thick. Stir in butter and pecans. Remove from heat, and let cool slightly.
- Preheat oven to 375°F. Unfold pastry on a lightly floured surface, and roll into a 12-inch square.
- Cut top rind off cheese; discard rind. Place cheese, rindless side up, in center of pastry. Spoon half of cranberry mixture onto cheese. Fold pastry accordian-style over cranberry mixture, brushing each fold with beaten egg. Twist top of pastry in a decorative fashion.
- Brush pastry all over with beaten egg. Place on a parchment paper-lined rimmed baking sheet. Bake 20 to 25 minutes or until pastry is deep golden brown.
- Serve pastry-wrapped cheese with assorted crackers and apple slices.
