Baked Brie with Roasted Cranberry Compote

Ingredients

  • 1½ cups cranberries
  • ¼ cup orange juice
  • 2 Tbsp honey
  • ½ Tbsp minced fresh rosemary
  • 2 Tbsp salted butter
  • ½ cup chopped pecans
  • ½ (17.3-oz) pkg frozen puff pastry, thawed
  • 1 (8-oz) round brie cheese
  • 1 large egg, lightly beaten
  • 1 (9.75-oz) pkg multigrain crispbread
  • 1 (4.25-oz) pkg table water crackers
  • 2 Granny Smith apples, sliced
  • 2 Honeycrisp apples, sliced

Instructions

  1. Cook cranberries, orange juice, honey, and rosemary over medium heat in a saucepan 5 minutes, stirring frequently or until mixture is very thick. Stir in butter and pecans. Remove from heat, and let cool slightly.
  2. Preheat oven to 375°F. Unfold pastry on a lightly floured surface, and roll into a 12-inch square.
  3. Cut top rind off cheese; discard rind. Place cheese, rindless side up, in center of pastry. Spoon half of cranberry mixture onto cheese. Fold pastry accordian-style over cranberry mixture, brushing each fold with beaten egg. Twist top of pastry in a decorative fashion.
  4. Brush pastry all over with beaten egg. Place on a parchment paper-lined rimmed baking sheet. Bake 20 to 25 minutes or until pastry is deep golden brown.
  5. Serve pastry-wrapped cheese with assorted crackers and apple slices.
