Peanutty Beef Stir-Fry
Brown Basmati Rice and PineappleIngredients
- ½ cup natural creamy peanut butter
- 2 Tbsp honey
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp chili paste (Sambal Oelek) or chili garlic sauce
- 2 lb flank steak or top sirloin, trimmed (see Note)
- 1 tsp salt
- ½ tsp pepper
- ¼ cup olive oil
- 1 organic red bell pepper, cut into thin strips
- 4 green onions, thinly sliced
- ½ cup chopped unsalted peanuts
Instructions
- Whisk together first 4 ingredients and 2 Tbsp water (mixture will be thick).
- Cut beef diagonally across the grain into thin slices; sprinkle with salt and pepper.
- Heat 2 Tbsp oil in a large nonstick skillet over medium-high heat; add half of beef, and sauté 5 minutes or to desired doneness.
- Remove from skillet. Repeat with remaining oil and beef.
- Add bell pepper to skillet; sauté 3 to 4 minutes.
- Return beef to skillet, and add peanut sauce; cook until thoroughly heated. Sprinkle with green onions and peanuts.
Side Dish Ingredients
- 1½ cups brown basmati rice (or use other brown rice)
- 1 cored fresh pineapple, cut into rings
Side Dish Instructions
- Cook rice according to package directions.
- Serve pineapple rings alongside stir-fry.
