Peanutty Beef Stir-Fry

Ingredients

  • ½ cup natural creamy peanut butter
  • 2 Tbsp honey
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp chili paste (Sambal Oelek) or chili garlic sauce
  • 2 lb flank steak or top sirloin, trimmed (see Note)
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ cup olive oil
  • 1 organic red bell pepper, cut into thin strips
  • 4 green onions, thinly sliced
  • ½ cup chopped unsalted peanuts

Instructions

  1. Whisk together first 4 ingredients and 2 Tbsp water (mixture will be thick).
  2. Cut beef diagonally across the grain into thin slices; sprinkle with salt and pepper.
  3. Heat 2 Tbsp oil in a large nonstick skillet over medium-high heat; add half of beef, and sauté 5 minutes or to desired doneness.
  4. Remove from skillet. Repeat with remaining oil and beef.
  5. Add bell pepper to skillet; sauté 3 to 4 minutes.
  6. Return beef to skillet, and add peanut sauce; cook until thoroughly heated. Sprinkle with green onions and peanuts.

Side Dish Ingredients

  • 1½ cups brown basmati rice (or use other brown rice)
  • 1 cored fresh pineapple, cut into rings

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Serve pineapple rings alongside stir-fry.
