Cajun Succotash over Brown Rice

Skillet Squash and Onion


  • 2 cups brown basmati rice (or use other brown rice)
  • 1 (28-oz) can BPA-free diced tomatoes
  • 2 (15-oz) cans BPA-free red beans, drained and rinsed
  • 1 (16-oz) pkg frozen cut okra
  • 2 cups organic vegetable broth
  • 2 cups frozen corn kernels
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1½ tsp organic Cajun seasoning


  1. Cook rice according to package directions.
  2. Combine tomatoes, beans, okra, broth, corn, onion, garlic and Cajun seasoning in a Dutch oven.
  3. Cover and bring tomato mixture to a boil. Reduce heat, and simmer, uncovered, 15 minutes.
  4. Serve succotash over rice.

Side Dish Ingredients

  • 2 Tbsp olive oil
  • 1 onion, sliced
  • 3 large yellow squash, sliced (see Note)
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Heat oil in a large skillet over medium-high heat; add onion, squash, salt, and pepper.
  2. Sauté 10 to 12 minutes or until tender, stirring occasionally.
