Overnight Breakfast Bulgur with Pears and Cinnamon Yogurt

Ingredients

  • 1 cup bulgur wheat
  • 1½ cups 1% low-fat milk
  • ¼ tsp salt
  • 2 Tbsp sliced almonds
  • ½ cup fat-free plain Greek yogurt
  • ½ tsp ground cinnamon
  • 2 small pears, cored and diced
  • ¼ cup honey

Instructions

  1. Combine bulgur, milk and salt in a large bowl; cover and chill overnight.
  2. Cook almonds in a dry skillet over medium-high heat 3 to 4 minutes or until toasted and fragrant.
  3. Stir together yogurt and cinnamon.
  4. Fluff bulgur with a fork. Spoon into 4 bowls; top with yogurt, pears, almonds and honey.
