Creamy Cajun Pasta with Sausage

Ingredients

  • 2 Tbsp olive oil
  • 1 (14-oz) pkg smoked sausage, sliced
  • ½ (16-oz) pkg 3 color pepper and onion strips
  • 2 Tbsp all-purpose flour
  • 2 cups milk
  • 1 Tbsp Cajun seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup julienne cut sun-dried tomatoes
  • 1 (16-oz) pkg linguine
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Sauté sausage and pepper mix in hot oil until browned, about 5 minutes. Add flour; cook, stirring, 2 minutes.
  3. Whisk in milk, seasoning, salt and pepper; bring to a boil.
  4. Simmer 5 minutes or until thickened; stir in tomatoes.
  5. Cook 3 minutes or until thoroughly heated.
  6. Meanwhile, cook linguine according to package directions; add to skillet and sprinkle with parsley.

Side Dish Ingredients

  • 1 head broccoli, cut into florets
  • 3 cloves garlic, minced
  • 3 Tbsp olive oil
  • 1 (14.3-oz) loaf French bread, cut into ½-inch-thick slices
  • 1 (5-oz) container freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 425°F.
  2. Spread broccoli on a large baking sheet and toss with garlic and oil. Sprinkle with salt and pepper to taste. Bake 15 minutes or until crisp-tender.
  3. Place bread slices on a baking sheet and sprinkle with cheese. Bake 5 to 8 minutes, until cheese is melted.
