Creamy Cajun Pasta with Sausage
Roasted Broccoli and Parmesan Toast
Ingredients
- 2 Tbsp olive oil
- 1 (14-oz) pkg smoked sausage, sliced
- ½ (16-oz) pkg 3 color pepper and onion strips
- 2 Tbsp all-purpose flour
- 2 cups milk
- 1 Tbsp Cajun seasoning
- ½ tsp salt
- ½ tsp pepper
- ¼ cup julienne cut sun-dried tomatoes
- 1 (16-oz) pkg linguine
- 2 Tbsp chopped fresh parsley
Instructions
- Heat oil in a large skillet over medium-high heat.
- Sauté sausage and pepper mix in hot oil until browned, about 5 minutes. Add flour; cook, stirring, 2 minutes.
- Whisk in milk, seasoning, salt and pepper; bring to a boil.
- Simmer 5 minutes or until thickened; stir in tomatoes.
- Cook 3 minutes or until thoroughly heated.
- Meanwhile, cook linguine according to package directions; add to skillet and sprinkle with parsley.
Side Dish Ingredients
- 1 head broccoli, cut into florets
- 3 cloves garlic, minced
- 3 Tbsp olive oil
- 1 (14.3-oz) loaf French bread, cut into ½-inch-thick slices
- 1 (5-oz) container freshly grated Parmesan cheese
Side Dish Instructions
- Preheat oven to 425°F.
- Spread broccoli on a large baking sheet and toss with garlic and oil. Sprinkle with salt and pepper to taste. Bake 15 minutes or until crisp-tender.
- Place bread slices on a baking sheet and sprinkle with cheese. Bake 5 to 8 minutes, until cheese is melted.
