Lime Basil Shrimp

Ingredients

  • 1½ lb peeled and deveined large shrimp
  • 2 Tbsp cornstarch
  • ½ tsp garlic powder
  • ½ tsp crushed red pepper
  • ¼ tsp salt
  • ¼ cup butter
  • 1 cup low-sodium chicken broth
  • ¼ cup fresh lime juice
  • 4 green onions, minced
  • ½ cup chopped fresh basil

Instructions

  1. Combine shrimp, cornstarch, garlic powder, red pepper and salt in a bowl; toss.
  2. Melt butter in a large skillet over medium-high heat.
  3. Add shrimp; cook 2 minutes.
  4. Add broth, lime juice and green onion; cook 2 minutes or until slightly thickened.
  5. Stir in basil and serve over rice.

  • 2 Tbsp butter
  • 2 (10-oz) pkg spinach
  • 1 Tbsp bottled minced garlic
  • ½ tsp crushed red pepper
  • 2 (8.8-oz) pouches microwavable jasmine rice

Side Dish Instructions

  1. Heat butter in a large skillet over medium heat; gradually add spinach, stirring until just wilted.
  2. Add garlic; cook 1 minute. Stir in pepper; season to taste.
  3. Heat rice according to package directions.
