Lime Basil Shrimp
Spicy Sauteéd Spinach and Jasmine Rice
Ingredients
- 1½ lb peeled and deveined large shrimp
- 2 Tbsp cornstarch
- ½ tsp garlic powder
- ½ tsp crushed red pepper
- ¼ tsp salt
- ¼ cup butter
- 1 cup low-sodium chicken broth
- ¼ cup fresh lime juice
- 4 green onions, minced
- ½ cup chopped fresh basil
Instructions
- Combine shrimp, cornstarch, garlic powder, red pepper and salt in a bowl; toss.
- Melt butter in a large skillet over medium-high heat.
- Add shrimp; cook 2 minutes.
- Add broth, lime juice and green onion; cook 2 minutes or until slightly thickened.
- Stir in basil and serve over rice.

- 2 Tbsp butter
- 2 (10-oz) pkg spinach
- 1 Tbsp bottled minced garlic
- ½ tsp crushed red pepper
- 2 (8.8-oz) pouches microwavable jasmine rice
Side Dish Instructions
- Heat butter in a large skillet over medium heat; gradually add spinach, stirring until just wilted.
- Add garlic; cook 1 minute. Stir in pepper; season to taste.
- Heat rice according to package directions.
