Chicken with Tomato Butter Sauce
Garlic Roasted Broccoli and Hot Cooked Linguine
Ingredients
- 2 lb boneless, skinless chicken breast
- 2 Tbsp olive oil
- 2 (14.5-oz) cans fire-roasted diced tomatoes
- 1 tsp bottled minced garlic
- ½ cup thinly sliced fresh basil
- ¼ cup butter
Instructions
- Halve chicken crosswise, and pound to ½-inch thickness; season with salt and pepper.
- Heat oil in a large skillet over medium heat; add chicken, and cook 4 minutes per side or until browned.
- Remove from skillet, and set aside.
- Add tomatoes and garlic to skillet; cook 5 minutes. Stir in basil; cook 2 minutes.
- Add butter, stirring until melted.
- Return chicken to skillet and cook until heated through; serve over pasta.
Side Dish Ingredients
- 2 (12-oz) pkg broccoli florets
- 3 Tbsp olive oil
- 1 tsp bottled minced garlic
- 1 (16-oz) pkg linguine
Side Dish Instructions
- Preheat oven to 425°F.
- Spread broccoli on a large baking sheet; toss with oil and sprinkle with garlic. Bake 15 minutes or until crisp-tender; season to taste.
- Cook pasta according to package directions.
