Chicken with Tomato Butter Sauce

Garlic Roasted Broccoli and Hot Cooked Linguine

Ingredients

  • 2 lb boneless, skinless chicken breast
  • 2 Tbsp olive oil
  • 2 (14.5-oz) cans fire-roasted diced tomatoes
  • 1 tsp bottled minced garlic
  • ½ cup thinly sliced fresh basil
  • ¼ cup butter

Instructions

  1. Halve chicken crosswise, and pound to ½-inch thickness; season with salt and pepper.
  2. Heat oil in a large skillet over medium heat; add chicken, and cook 4 minutes per side or until browned.
  3. Remove from skillet, and set aside.
  4. Add tomatoes and garlic to skillet; cook 5 minutes. Stir in basil; cook 2 minutes.
  5. Add butter, stirring until melted.
  6. Return chicken to skillet and cook until heated through; serve over pasta.

Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 3 Tbsp olive oil
  • 1 tsp bottled minced garlic
  • 1 (16-oz) pkg linguine

Side Dish Instructions

  1. Preheat oven to 425°F.
  2. Spread broccoli on a large baking sheet; toss with oil and sprinkle with garlic. Bake 15 minutes or until crisp-tender; season to taste.
  3. Cook pasta according to package directions.
