One-Pan Roasted Salmon and Vegetables
Ingredients
- 1 (12-oz) pkg broccoli florets
- 2 yellow squash, cut into ¼-inch-thick slices
- ½ red onion, cut into thin wedges
- 1 pint cherry tomatoes
- 4 Tbsp olive oil
- 3 cloves garlic, minced
- ½ tsp crushed red pepper
- 1 (2-lb) salmon fillet
- 1 lemon, thinly sliced
Instructions
- Preheat oven to 450°F. Line a rimmed baking sheet with parchment paper.
- Toss together broccoli, squash, onion, tomatoes, 2 Tbsp oil, garlic, and red pepper on prepared pan.
- Arrange vegetables on one side of pan. Place salmon on opposite side of pan. Brush with 2 Tbsp oil. Lightly season salmon and vegetables with salt and pepper.
- Arrange lemon slices over salmon.
- Bake 20 to 25 minutes or until salmon flakes with a fork and vegetables are beginning to brown.
