One-Pan Roasted Salmon and Vegetables

Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 2 yellow squash, cut into ¼-inch-thick slices
  • ½ red onion, cut into thin wedges
  • 1 pint cherry tomatoes
  • 4 Tbsp olive oil
  • 3 cloves garlic, minced
  • ½ tsp crushed red pepper
  • 1 (2-lb) salmon fillet
  • 1 lemon, thinly sliced

Instructions

  1. Preheat oven to 450°F. Line a rimmed baking sheet with parchment paper.
  2. Toss together broccoli, squash, onion, tomatoes, 2 Tbsp oil, garlic, and red pepper on prepared pan.
  3. Arrange vegetables on one side of pan. Place salmon on opposite side of pan. Brush with 2 Tbsp oil. Lightly season salmon and vegetables with salt and pepper.
  4. Arrange lemon slices over salmon.
  5. Bake 20 to 25 minutes or until salmon flakes with a fork and vegetables are beginning to brown.
