Lettuce-Wrapped Meat Loaf Burgers

Ingredients

  • 2 lb ground beef
  • 2 large eggs, lightly beaten
  • ½ cup almond flour
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ¾ tsp pepper
  • 12 large romaine lettuce leaves
  • ½ cup thinly sliced onion
  • 6 stacker-sliced dill pickles
  • 3 Tbsp ketchup

Instructions

  1. Preheat oven to 450°F.
  2. Combine ground beef, eggs, flour, garlic, salt, and pepper; mix just until combined. Shape into 6 patties; place on a baking sheet.
  3. Bake 14 minutes or until done, turning once.
  4. For each wrap, stack 2 lettuce leaves. Top with burgers, onion, pickles, and ketchup. Roll up.

Side Dish Ingredients

  • 2 lb Broccolini, trimmed (or use broccoli florets)
  • ½ tsp salt
  • ¼ tsp crushed red pepper
  • 1 Tbsp olive oil
  • 2 Tbsp red wine vinegar

Side Dish Instructions

  1. Cook broccolini, salt, and red pepper in hot oil in a large skillet over medium-high heat, stirring often, 5 minutes or until Broccolini is crisp-tender.
  2. Stir in vinegar.
