Lettuce-Wrapped Meat Loaf Burgers
Skillet Broccolini
Ingredients
- 2 lb ground beef
- 2 large eggs, lightly beaten
- ½ cup almond flour
- 2 cloves garlic, minced
- 1 tsp salt
- ¾ tsp pepper
- 12 large romaine lettuce leaves
- ½ cup thinly sliced onion
- 6 stacker-sliced dill pickles
- 3 Tbsp ketchup
Instructions
- Preheat oven to 450°F.
- Combine ground beef, eggs, flour, garlic, salt, and pepper; mix just until combined. Shape into 6 patties; place on a baking sheet.
- Bake 14 minutes or until done, turning once.
- For each wrap, stack 2 lettuce leaves. Top with burgers, onion, pickles, and ketchup. Roll up.
Side Dish Ingredients
- 2 lb Broccolini, trimmed (or use broccoli florets)
- ½ tsp salt
- ¼ tsp crushed red pepper
- 1 Tbsp olive oil
- 2 Tbsp red wine vinegar
Side Dish Instructions
- Cook broccolini, salt, and red pepper in hot oil in a large skillet over medium-high heat, stirring often, 5 minutes or until Broccolini is crisp-tender.
- Stir in vinegar.
