Orange Cream Cheese-Stuffed French Toast
Tropical Compote
Ingredients
- ½ cup ⅓-less-fat cream cheese, softened
- 1 Tbsp grated orange rind
- 8 (1-oz) slices 100% whole wheat sandwich bread (such as Nature's Own)
- ½ cup 1% low-fat milk
- ½ tsp sugar
- ¼ tsp vanilla extract
- 2 large eggs
Instructions
- Stir together cream cheese and orange rind until well blended. Spread over 4 slices bread.
- Top with 4 slices bread, pressing gently around edges to seal.
- Whisk together milk, sugar, vanilla and eggs in a shallow dish until blended. Dip 2 sandwiches into egg mixture, soaking 30 seconds per side.
- Cook sandwiches, in batches, in a large griddle or nonstick skillet coated with cooking spray over medium-high heat 2 minutes per side or until lightly browned.
- Divide French toast among 4 plates; top with Tropical Compote.
Side Dish Ingredients
- 1 orange
- 1½ cups pineapple chunks
- 2 Tbsp brown sugar
- ⅓ cup sweetened flaked coconut
Side Dish Instructions
- Squeeze juice from orange.
- Bring orange juice, pineapple, and sugar to a boil in a small saucepan; reduce heat, and simmer 10 minutes or until syrupy. Stir in coconut.
