Sausage and Cabbage Skillet Meal

Sour Cream Mashed Potatoes and Buttered Sweet Peas

Ingredients

  • 1 Tbsp olive oil
  • 2 lb kielbasa sausage, cut into ½-inch slices
  • 1 small head cabbage, cored and cut into 1-inch pieces
  • 1 sweet onion, coarsely chopped
  • 1 Tbsp bottled minced garlic
  • 2 tsp sugar
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tsp apple-cider vinegar
  • 1½ tsp Dijon mustard

Instructions

  1. Heat oil in a large skillet over medium-high heat; add sausage, and cook, stirring occasionally, 4 minutes.
  2. Using a slotted spoon, transfer sausage to a paper-towel lined plate.
  3. Add cabbage, onion, garlic, sugar, salt and pepper to drippings; cook, stirring occasionally over medium heat, 10 minutes or until cabbage is tender.
  4. Return sausage to skillet along with vinegar and mustard.
  5. Cook 2 minutes or until heated through. Serve over mashed potatoes.

Side Dish Ingredients

  • 1 (24-oz) pkg frozen steam and mash potatoes
  • ½ cup sour cream
  • 1 (16-oz) pkg frozen sweet peas
  • 2 Tbsp butter

Side Dish Instructions

  1. Prepare potatoes according to package directions; stir in sour cream.
  2. Steam peas according to package directions; toss with butter and season to taste.
