Sausage and Cabbage Skillet Meal
Sour Cream Mashed Potatoes and Buttered Sweet Peas
Ingredients
- 1 Tbsp olive oil
- 2 lb kielbasa sausage, cut into ½-inch slices
- 1 small head cabbage, cored and cut into 1-inch pieces
- 1 sweet onion, coarsely chopped
- 1 Tbsp bottled minced garlic
- 2 tsp sugar
- ½ tsp salt
- ½ tsp pepper
- 2 tsp apple-cider vinegar
- 1½ tsp Dijon mustard
Instructions
- Heat oil in a large skillet over medium-high heat; add sausage, and cook, stirring occasionally, 4 minutes.
- Using a slotted spoon, transfer sausage to a paper-towel lined plate.
- Add cabbage, onion, garlic, sugar, salt and pepper to drippings; cook, stirring occasionally over medium heat, 10 minutes or until cabbage is tender.
- Return sausage to skillet along with vinegar and mustard.
- Cook 2 minutes or until heated through. Serve over mashed potatoes.
Side Dish Ingredients
- 1 (24-oz) pkg frozen steam and mash potatoes
- ½ cup sour cream
- 1 (16-oz) pkg frozen sweet peas
- 2 Tbsp butter
Side Dish Instructions
- Prepare potatoes according to package directions; stir in sour cream.
- Steam peas according to package directions; toss with butter and season to taste.
